For more than 40 years, Peter and Ann Olkkola have followed this familiar rhythm of the seasons, operating their small family maple business and turning the sap of New Hampshire’s maple trees into 100% pure maple syrup. Each spring, they prepare for Mother Nature’s annual performance, watching the weather and waiting for those treasured cold nights and warmer days that set the sap flowing.

The result is what the Olkkolas fondly call “nature’s liquid gold”—pure maple syrup with the rich, unmistakable flavor that comes from a New England sugar season.

Though the operation is small, maple sugaring is a longstanding tradition at Olkkola Farm. From producing the syrup to sharing and distributing it, the family has spent decades carrying on a craft closely tied to the woods, weather, and changing seasons of New Hampshire.
