One-Pan Wonder Breakfast

In a skillet, saute  mushrooms in the finest quality butter you care to use! Once the mushrooms are cooked to your preference:                                                            

  • add a small amount of  water for steaming the next most wonderful ingredient
  • add freshly harvested spring spinach
  • add eggs to poach on top of the steaming spinach and mushrooms
  • top with your favorite cheddar or feta cheese
  • finish off with spring chives or over-wintering onion greens
  • S and P to taste

Cover and allow to steam until the eggs are done to your desire.
Amounts of all ingredients depend on the number of mouths you wish to feed. Be sure to search for the finest and freshest ingredients from your favorite local farm. Thanks always for supporting local foods and local farmer.
