Sherry Glaze Pork or Fowl

This makes a great glaze to keep in the refrigerator for a last minute dinner party. Use it on chicken quarters as well as a whole chicken or pork roast. Shown here is a boneless center cut pork roast.  Best not to let sauce boil. Boiled prepared mustard changes its flavor a bit.

1/2 cup honey                                                                                                                   glzed pork roast
1/4 cup sherry
1/4 cup dijon-style mustard
1 teaspoon salt

Gently heat honey in a small saucepan until thin. Off the burner stir in sherry,  mustard, and salt.
