Chicken Salad with Apples and Leeks

This chicken and apple salad is a bit more interesting than most in that it includes prepared mustard and very finely sliced leeks which give the crunch one might get from celery.

1 teaspoon prepared mustard                                                                        
4 tablespoons mayonnaise
1 teaspoon tarragon or tarragon vinegar
1/2 teaspoon lemon zest
salt and pepper
1 cup cubed cooked chicken
hard boiled egg, chopped coarsely
2 tablespoons finely sliced leeks, white and pale green parts only
2 tablespoons diced celery
1/2 apple,cored and cubed

In a medium sized mixing bowl blend mustard into mayonnaise and add chopped tarragon or tarragon vinegar, lemon zest, salt and pepper. Add remaining ingredients and gently toss. Serve on a lettuce leaf topped with a large slice of garden ripe tomato and then a scoop of the salad.
