Balsamic Dijon Lamb Chops

This recipe was adapted from, a great source for good lamb recipes. Loin, rib, or shoulder chops work well. Shoulder chops would do best with an overnight marinade

4 New Hampshire raised lamb chops                                                                                           
1 clove garlic, minced
1/3 cup olive oil
5 tablespoons Balsamic vinegar
3 tablespoons lemon juice
2 tablespoons Dijon mustard
2 teaspoons herbes de Provence (or any herb blend of choice)
salt and pepper to taste

In a mixing bowl, combine garlic, olive oil, vinegar, lemon juice, mustard, herbs, salt and pepper. Pierce chops with a fork several times on each side and place them in a plastic food storage bag for marinating. Discard marinade and broil or grill chops over medium heat for 4-6 minutes. They can also be pan friend and transferred to a preheated 400 degree oven to finish cooking to preferred doneness.
